Felix was raised and trained in Switzerland.
His passion for Italian food began with the annual family trips to Italy and he has many delicious memories from these trips.
He arrived in Australia in 1980 and then headed the kitchens of Nautilus and Catalinas in Port Douglas.
The menu is fluid, changing constantly due to Felix's passion for using seasonal ingredients.
With suppliers now growing the special vegetables and herbs that he requires to compliment his meals, he knows no boundaries.
